I love a good excuse to eat Mexican food.  And what better excuse than Taco Tuesday?!?  Usually, we make our own tacos at home. They are much healthier than most restaurants.

I almost always use ground turkey or chicken for our taco meat.  Sprouts’ Market has yummy ground chicken, and you can ask the butcher to grind it fresh for you, which makes it taste extra delicious!  I also like the organic ground turkey from Trader Joe’s.  For a splurge, though, I like the grass-fed organic ground beef from Costco.  Here’s how I cook up our tasty Tuesday tacos:

Ingredients:

1 Tbsp extra virgin olive oil

1 medium sweet onion, diced

1 package ground meat, about 1 1/4 lbs.

1/2 medium russet potato, peeled and grated

salt and pepper

Put olive oil in large skillet over medium-high heat.  Cook until tender, about 3-4 minutes.

Add ground meat and potato and cook through, stirring frequently

Season with salt and pepper, to taste

That’s it!  So easy!  If your family likes a little spice, you can add cumin, chili powder, or red pepper to the meat as well.  Or let your toppings make the flavors come through.

We like to use corn or whole grain tortillas for our tacos.  I heat them in a damp paper towel in the microwave for about 20-30 seconds on high.

Great filling ideas include shredded cheese (jack, cheddar, mozzarella, or queso fresco for a really authentic taste), diced tomatoes, green onion, avocado (or guacamole), cilantro, and salsa.
