I made this rice for my family tonight, and they loved it!  It’s a great side dish for grilled meats, especially marinated chicken breast.

Ingredients:

1 C long grain brown rice

2 C water

1 green tea bag

1 Tbsp olive oil

1/2 medium chopped sweet or white onion

1 clove garlic, minced

1 Tbsp cinnamon

1 teaspoon curry powder

3/4 C dried cranberries

Put brown rice, water and green tea bag in medium saucepan, bring to a boil.  Lower to a simmer and cook, covered, approximately 45 minutes, or until water is absorbed.  Note:  remove tea bag after simmering 5 minutes so as not to make rice bitter

About 5-10 minutes before rice is finished cooking, heat olive oil in a small frying pan, over medium-high heat.  Add onion and garlic and stir approximately 2 minutes. When garlic and onion begin to turn golden, add cinnamon and curry and continue to saute until onions are tender and cooked through, stirring frequently.

When rice is finished cooking, add onion mixture to pan of rice, along with dried cranberries.  Stir in thoroughly and enjoy!
